  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9” square baking dish with parchment paper.
  2. In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Measure out ¾ cup and whisk in diced butter until melted.
  3. In a medium bowl, whisk together eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt. Slowly incorporate the boiled cider mixture.
  4. Stir in the flour until just combined.
  5. Pour batter into the prepared dish and bake for 22–25 minutes or until golden and baked through.
  6. Allow to cool slightly on a rack before brushing melted butter on top and sprinkling with cinnamon sugar.
