  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the Apple Filling: Combine diced apples, apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, and salt in a bowl. Mix well.
  2. Make the Dough: Dissolve cornstarch in water. Combine bread flour, sugar, yeast, salt, milk, cream, egg, and vanilla extract in a mixing bowl. Add the Tangzhong mixture. Slowly add the cornstarch mixture until fully incorporated and knead until smooth.
  3. Let It Rise: Transfer dough to a greased bowl and cover; allow it to rise until doubled in size (60-90 minutes).
  4. Roll Out the Dough: Punch down the risen dough and roll it into a rectangle about ¼ inch thick.
  5. Fill & Roll Up: Spread softened butter on the dough and sprinkle with cinnamon-sugar mixture and apple filling. Roll tightly from one end.
  6. Cut & Place in Pan: Cut into equal pieces (about 12) and place them in a greased baking pan.
  7. Second Rise: Cover again and let rise until puffy (30-45 minutes).
  8. Bake: Preheat oven to 350°F (175°C) and bake for about 30 minutes or until golden brown.
  9. Prepare Frosting: Mix softened butter and cream cheese until smooth; gradually add powdered sugar and stir in heavy cream and apple butter.
  10. Frost & Serve: Spread frosting over warm rolls before serving.
