4 slices sourdough or artisan bread
1 cup fresh blackberries
1 tablespoon balsamic vinegar
1 tablespoon honey
Pinch of salt
4 oz brie cheese, thinly sliced
2 tablespoons butter, softened
Instructions
In a small saucepan over medium heat, combine blackberries, balsamic vinegar, honey, and a pinch of salt. Cook for about 5 minutes until the mixture thickens slightly. Let it cool.
Heat a non-stick skillet over medium-low heat. Butter one side of each bread slice generously.
Place two slices of bread in the skillet, buttered-side down. Layer with brie cheese and spoon some blackberry mixture over it. Top with another layer of brie and cover with remaining bread slices (buttered-side up).
Cook for 2–3 minutes on each side until golden brown and cheese is melted. Let rest for 1 minute before slicing diagonally.
