  • 1/2 teaspoon dried thyme
  • 2 cups farro, cooked
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pine nuts
  • 1/4 cup mixed fresh herbs, such as parsley, chives, oregano
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons sparkling grape juice vinegar
  • 1 1/2 tablespoons honey
  • 2 garlic cloves, finely minced or crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup olive oil, extra virgin

Instructions

  1. Preheat oven to 400°F (200°C). Halve the cherry tomatoes and mix with olive oil, sugar, minced garlic, salt, pepper, and thyme in a bowl.
  2. Spread the seasoned tomatoes on a baking sheet and roast for 30-40 minutes until caramelized.
  3. Cook farro according to package instructions; drain and cool slightly.
  4. Whisk together dressing ingredients: lemon juice, vinegar, honey, garlic, salt, pepper, and olive oil.
  5. In a large bowl, combine roasted tomatoes, cooked farro, feta cheese, pine nuts, and herbs. Drizzle with dressing and toss gently.
