  • ½ cup (115g) unsalted butter (softened)
  • ⅓ cup (70g) brown sugar (light or dark)
  • ¼ teaspoon salt
  • 1¼ cups (157g) all-purpose flour (spooned and leveled)
  • 6 tablespoons (86g) unsalted butter (cut into pieces)
  • ¾ cup (156g) brown sugar (light or dark)
  • 2 tablespoons honey
  • ¼ cup (60g) full-fat coconut milk or plant-based cream alternative
  • scant ½ teaspoon salt
  • 1¼ cups (105g) sweetened shredded coconut
  • ½ teaspoon pure vanilla extract
  • ¾ cup (125g) milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan or line it with parchment paper.
  2. For the shortbread crust: In a mixing bowl, cream together softened butter, brown sugar, and salt until smooth. Gradually add flour, mixing until combined. Press this mixture into the bottom of the prepared pan and bake for 15 minutes or until lightly golden.
  3. For the caramel coconut filling: In a saucepan over medium heat, melt butter and stir in brown sugar, honey, full-fat coconut milk, and salt. Bring to a gentle boil for 2 minutes while stirring constantly. Remove from heat and mix in shredded coconut and vanilla.
  4. Pour the caramel mixture over the baked crust and spread evenly. Bake again for 10-12 minutes until bubbly.
  5. Melt milk chocolate chips in the microwave and drizzle over cooled bars before slicing.
