Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • 1 medium pear (peeled, cored, and diced)
  • ½ cup unsalted butter (cold, cut into pieces)
  • 1 tablespoon vanilla extract
  • 1 cup buttermilk (cold)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and spices until well combined.
  3. Add cold butter pieces to the dry mixture and use a pastry cutter or fork to blend until it resembles coarse crumbs.
  4. Stir in the diced pear. In another bowl, mix together the vanilla extract and cold buttermilk before gradually adding this to the dry mixture. Stir gently until just mixed.
  5. Transfer the dough to a floured surface and knead lightly. Shape it into a round disc about 1-inch thick; cut into wedges or use a biscuit cutter.
  6. Place on the prepared baking sheet and brush with heavy cream for richness. Bake for about 20 minutes or until golden brown.
  7. While cooling, prepare the glaze by combining confectioners' sugar, cinnamon, and heavy cream until smooth; drizzle over scones before serving.
