  • 1 cup Reese’s peanut butter cups, chopped

  1. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition and stir in vanilla.
  2. In another bowl, whisk together flour, baking soda, and salt; gradually mix dry ingredients into the wet mixture until combined. Chill dough for 1 hour.
  3. For the cheesecake filling, beat cream cheese until smooth, then add sugar, egg, and vanilla; mix until creamy.
  4. Preheat oven to 350°F (175°C). Scoop chilled cookie dough into disks; place cheesecake filling in the center and seal the dough around it.
