  • ¼ cup vegetable oil
  • 1 large lemon (sliced into thin rounds, seeds removed)
  • 1 cup chicken broth (low sodium)
  • ½ cup white grape juice (dry)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter (unsalted)
  • 2 tablespoons parsley (chopped)

Instructions

  1. Prepare the coating by mixing flour, salt, and pepper in a shallow dish. Beat eggs in another bowl.
  2. Coat each chicken breast in the flour mixture, then dip into the beaten eggs.
