  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 lb penne pasta
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package directions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook until browned and fully cooked through. Remove from skillet.
  3. In the same skillet, add chopped onion; sauté until softened (about 5 minutes). Add minced garlic; cook for another minute.
  4. Stir in thawed spinach and cook until heated through. Pour in chicken broth and heavy cream; bring to a simmer.
  5. Stir in grated Parmesan cheese until melted. Add cooked penne and chicken back to the skillet; toss to combine well, adjusting sauce consistency with reserved pasta water if necessary.
  6. Serve immediately with additional Parmesan on top.
