  • ½ cup brown sugar, packed for filling
  • 2 tsp ground cinnamon for filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with granulated sugar until fluffy; then add brown sugar.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by mixing brown sugar and cinnamon in a small bowl.
  7. Roll out half of the dough on parchment paper, sprinkle with filling mixture, and roll tightly.
  8. Slice into rounds and place on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until golden brown.
