  • 2 tablespoons instant espresso powder
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon baking powder
  • 3/4 cup all-purpose flour
  • 3 tablespoons heavy whipping cream
  • 1 1/2 teaspoons instant coffee granules
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1/8 teaspoon salt (for frosting)
  • 1 3/4 cup powdered sugar (for frosting)
  • 1/2 cup dark chocolate chips (for topping)
  • 2 tablespoons heavy whipping cream (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with foil; spray with nonstick baking spray.
  2. In a mixing bowl, whisk together melted butter and cocoa powder until smooth.
  3. In another bowl, beat together sugar, eggs, espresso powder, and vanilla until light and fluffy. Gradually mix in the cocoa mixture.
  4. Stir together salt, baking powder, and flour in a separate bowl. Slowly add this dry mixture to the wet ingredients until just combined.
  5. Spread the brownie batter evenly in the prepared pan and bake for 25–28 minutes or until a toothpick comes out slightly sticky. Let cool completely.
  6. For the coffee cream, stir together cream and instant coffee granules until dissolved; set aside.
  7. Beat softened butter and salt in a bowl until creamy; gradually add powdered sugar followed by coffee cream until fluffy.
  8. Frost cooled brownies with the coffee frosting.
  9. Melt dark chocolate chips with heavy cream in the microwave at intervals; stir until smooth.
  10. Spread melted chocolate over the frosting and let set before slicing into squares.
