  • 12 oz turkey sausage or chicken sausage, sliced
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 3 (15 oz) cans of white beans (cannellini or great northern), drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • ½ cup heavy cream (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté sliced turkey or chicken sausage until browned (about 5 minutes).
  2. Stir in chopped onion, diced carrots, diced celery, and minced garlic. Sauté until vegetables are tender.
  3. Pour in chicken broth and bring to a boil. Add drained white beans, smoked paprika, dried thyme, and bay leaf; stir well.
  4. Reduce heat to low; let the soup simmer for about 30 minutes.
  5. For creaminess, blend a portion of the soup using an immersion blender or regular blender.
  6. If desired, stir in heavy cream for added richness. Season with salt and black pepper to taste before serving.
  7. Ladle into bowls and garnish with freshly chopped parsley.
