  • 1/2 cup (75g) diced yellow onion
  • 1/2 cup (60g) diced celery
  • 2 garlic cloves, minced
  • 1/4 cup (30g) all-purpose flour
  • 3 cups (720ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) whole milk
  • 1/2 teaspoon (1g) paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1/2 pound (225g) lump crab meat, picked over for shells
  • 1/2 pound (225g) cooked small shrimp, peeled and deveined
  • 1 tablespoon (15ml) lemon juice
  • Optional: chopped parsley or chives for garnish

Instructions

  1. In a large saucepan, heat butter and olive oil over medium heat. Sauté diced onion and celery until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
  2. Sprinkle flour over the vegetables, stirring to coat evenly. Cook for 2 minutes while stirring constantly. Gradually whisk in chicken broth until smooth.
  3. Stir in heavy cream and whole milk, then add paprika, salt, and pepper; simmer gently for 10–15 minutes.
  4. Carefully stir in crab meat and shrimp; simmer for another 5–7 minutes until heated through.
  5. Add lemon juice before serving; garnish with chopped parsley or chives if desired.
