  • 3 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (chopped)
  • 1 teaspoon red pepper flakes (optional, for a hint of heat)
  • 1½ cups orzo pasta
  • 2½ cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 2 cups fresh spinach (chopped)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • Fresh basil or parsley (chopped)
  • Extra parmesan cheese

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken with salt, pepper, Italian seasoning, and paprika. Cook until golden brown (5-7 minutes), then set aside.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chopped sun-dried tomatoes and optional red pepper flakes; cook for another minute.
  3. Stir in orzo to coat with the mixture. Pour in chicken broth and bring to simmer. Cover and let cook for about 10 minutes.
  4. Once orzo is tender, add heavy cream and return cooked chicken to the skillet. Simmer for an additional 3-5 minutes.
  5. Stir in chopped spinach until wilted and mix in grated parmesan until the sauce thickens.
  6. Serve garnished with fresh herbs and extra parmesan.
