  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Soak dried chilies in hot water for 15 minutes until softened.
  2. Blend soaked chilies with onion, garlic, and diced tomatoes until smooth.
  3. Place beef in the slow cooker and pour the chili mixture over it.
  4. Add beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper; mix gently.
  5. Cover and cook on low for 8-10 hours until beef is fork-tender.
  6. Shred the beef and stir it back into the sauce.
  7. Fry corn tortillas in a pan until crispy on both sides.
  8. Assemble tacos by filling tortillas with shredded beef and garnishing with cilantro and onion.
