  • 300 g Cavatappi macaroni
  • 5 onions (thinly sliced)
  • 1/2 cup beef broth
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 baguette (for breadcrumbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tbsp flour + 3 tbsp water (for béchamel)
  • 1 tsp sugar
  • Fresh parsley (chopped)
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. In a large skillet, heat olive oil over medium heat and sauté sliced onions for 30–40 minutes until caramelized.
  2. Add beef broth to deglaze the pan, simmer for 10 minutes, then set aside.
  3. In the same skillet, create a béchamel by melting butter, whisking in flour, and gradually adding heavy cream until thickened.
  4. Stir in two-thirds of the caramelized onions into the béchamel sauce along with seasonings and cheese.
  5. Cook cavatappi macaroni until slightly undercooked; combine with the sauce and transfer to a baking dish.
  6. Top with remaining onions and breadcrumbs; bake at 350°F (175°C) for 10–15 minutes until golden brown.
  7. Let cool slightly before serving.
