  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat the oven to 375°F. Lightly spray two baking sheets with non-stick spray and arrange three tortillas on each sheet. Bake for 3-5 minutes until golden.
  2. In a skillet over medium-high heat, cook the ground beef until browned, crumbling it as it cooks. Drain excess grease.
  3. Stir in taco seasoning and water; bring to a boil then reduce heat and simmer for 10 minutes.
  4. Warm refried beans in a microwave-safe bowl for 1-2 minutes until heated through.
  5. Spread a thin layer of warm refried beans on one tortilla and top with a third of the cooked beef mixture. Layer another tortilla on top.
  6. Spread about 3 tablespoons of enchilada sauce over the second tortilla and sprinkle with cheddar and pepper-jack cheeses, diced tomatoes, green onions, and black olives.
  7. Repeat layering with remaining tortillas to create a total of three stacked pizzas.
  8. Bake assembled pizzas in the oven for about 5 minutes until cheese is melted and bubbly.
