  • 1 lb potato gnocchi (store-bought or homemade)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare your ingredients by slicing the chicken, halving cherry tomatoes, mincing garlic, and zesting the lemon.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then cook until golden brown (5–7 minutes). Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add cherry tomatoes and cook for an additional 2 minutes.
  4. Pour in chicken broth and bring to a simmer. Lower heat before stirring in heavy cream along with lemon zest and juice.
  5. Add gnocchi to the sauce mixture and cook for about 3–4 minutes until tender. Stir in baby spinach just before finishing cooking.
  6. Return cooked chicken to the skillet and mix well. Adjust seasoning as needed, then garnish with fresh basil or parsley before serving.
