  • 1 lb large shrimp, peeled and deveined
  • 12 oz orzo pasta
  • 1/4 cup crumbled feta cheese
  • 2 tbsp extra-virgin olive oil
  • Juice and zest of 1 large lemon
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, roughly chopped
  • Fresh parsley and dill, chopped

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest. Spread on the baking sheet in a single layer.
  3. Roast shrimp for 8–10 minutes until opaque. Set aside.
  4. Cook orzo in salted boiling water until al dente; drain.
  5. In the pot with hot orzo, mix in olive oil, lemon juice, garlic, and optional red pepper flakes.
  6. Fold in cherry tomatoes, spinach, parsley, dill, and gently mix in feta.
  7. Top orzo with roasted shrimp and serve warm or at room temperature.
