  • 4 sea bass fillets (about 6 oz each)
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 10 oz fresh spinach
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Pat sea bass fillets dry; season with salt and pepper.
  2. In a bowl, combine minced garlic, lemon zest, juice, and melted butter. Set aside.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear sea bass fillets for 2-3 minutes on each side until golden brown; spoon the lemon-garlic mixture over them.
  4. Transfer skillet to preheated oven; bake for about 8-10 minutes until fish flakes easily.
  5. For creamed spinach, melt butter in another skillet over medium heat. Sauté chopped onion and garlic until softened. Add spinach; cook until wilted. Stir in cream, Parmesan, salt, pepper, and nutmeg if desired; simmer until thickened.
  6. Serve creamed spinach on plates topped with sea bass; garnish with parsley.
