  • 1 cup all-purpose flour
  • 1 tablespoon Cajun seasoning

  • 1 teaspoon onion powder
  • 1 teaspoon paprika

  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup buttermilk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped green onions
  • 1/4 cup turkey bacon
  • Vegetable oil (for frying)

Instructions

  1. Peel and slice the russet potatoes into thin fries. Rinse in cold water to remove excess starch and pat dry.
  2. In a large bowl, mix flour with Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne (if using).
  3. Dip each potato fry into buttermilk first, then coat with the seasoned flour mixture.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry coated fries in batches for about 4–5 minutes until golden brown and crispy.
  5. Remove from oil using a slotted spoon and drain on paper towels. While hot, top with cheddar and Monterey Jack cheese, jalapeños, and turkey bacon.
