  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 large apples, finely chopped
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 11×7 inch baking pan with foil or spray it with cooking spray.
  2. In a bowl, combine flour, baking powder, and salt; set aside. In another bowl, cream together softened butter, sugar, and dark brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract and cinnamon. Gradually mix in dry ingredients until just combined; fold in chopped apples.
  4. Pour batter into prepared pan and bake for about 25 minutes or until golden brown. A toothpick should come out clean when inserted into the center.
  5. For the glaze, heat brown sugar, butter, vanilla extract, and cinnamon in a saucepan until melted; stir in maple syrup and powdered sugar until smooth.
  6. Allow blondies to cool slightly before drizzling with glaze. Cool completely before cutting into squares.
