  • 1 tbsp lemon juice (fresh)

  • 1 tsp dried thyme
  • ½ tsp salt

  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp lemon juice (for vinaigrette)
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced) (for vinaigrette)
  • ½ tsp dried oregano (for vinaigrette)

Instructions

  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Place sirloin steak in the marinade and coat evenly. Allow it to marinate for 30 minutes to 4 hours in the refrigerator.
  2. In another bowl, mix Greek yogurt or coconut yogurt with grated cucumber, lemon juice, minced garlic, fresh dill, salt, and pepper. Stir well to combine and chill in the fridge while preparing other components.
  3. Whisk together olive oil, lemon juice, honey if using, minced garlic, oregano, salt, and pepper in a small mixing bowl.
  4. Heat a cast iron skillet over medium-high heat. Once hot, sear marinated steak for about 4–5 minutes on each side until desired doneness is reached. Remove from heat and let it rest before slicing thinly against the grain.
  5. In serving bowls or meal prep containers, layer cooked grains as a base. Top with sliced steak followed by cherry tomatoes, diced cucumber, red onion slices, kalamata olives, crumbled feta cheese if using, and fresh herbs. Drizzle tzatziki sauce and vinaigrette over everything before serving.
