Instructions

  1. Preheat your oven to 350°F (176°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, spices, and salt; set aside.
  3. In another bowl, combine melted butter and brown sugar until smooth. Mix in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in oats and pecans.
  5. Chill the dough covered in the refrigerator for 15 minutes.
  6. Using a cookie scoop, place rounded dough onto prepared sheets, spacing evenly.
  7. Bake for 12–15 minutes until golden on the bottom but slightly soft in the center. Cool before serving.
