  • 1/2 cup packed brown sugar
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon fine sea salt
  • 1/2 cup very cold salted butter, diced or grated
  • 3/4 cup pumpkin purée
  • 1/3 cup buttermilk (or milk), plus extra for brushing
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons buttermilk (or milk) for glaze
  • 1/2 teaspoon vanilla extract for glaze
  • Optional: 1/4 teaspoon ground cinnamon, ginger or cardamom

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in pumpkin puree, buttermilk, and vanilla until just combined.
  5. Turn dough onto a floured surface; gently fold until it holds together. Pat into an 8-inch circle and cut into wedges.
  6. Place wedges on the prepared baking sheet and freeze for 15 minutes.
  7. Brush tops with buttermilk and bake for 13-15 minutes or until lightly golden.
  8. Allow to cool slightly before drizzling with glaze.
