  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon Dijon mustard
  • 1 small onion, thinly sliced
  • ½ teaspoon thyme (optional)
  • 4 large russet potatoes, peeled and cubed
  • ¼ cup butter
  • ½ cup milk
  • ¼ cup sour cream (optional, for extra creaminess)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, and pepper. Mix well until evenly combined.
  2. Roll the mixture into 1-inch meatballs.
  3. Heat olive oil in a large skillet over medium heat.
  4. Fry the meatballs in batches until browned on all sides (about 7-8 minutes). Set aside.
  5. In the same skillet used for meatballs, melt butter over medium heat.
  6. Add sliced onions; cook until soft and golden brown (about 5 minutes).
  7. Stir in flour; cook for 1 minute.
  8. Gradually whisk in beef broth and Dijon mustard.
  9. Add thyme (if using) and season with salt and pepper. Simmer until thickened (about 5-7 minutes).
  10. Return meatballs to skillet; coat them in gravy. Simmer for another 5 minutes.
  11. Boil peeled and cubed potatoes in salted water until tender (about 15-20 minutes).

  13. Add butter, milk, sour cream (if using), salt, and pepper.
