  • 12 medium shrimp, peeled and deveined
  • 4 cups cooked white rice
  • 480 milliliters chicken broth
  • 1.5 cups mixed onions and bell peppers, finely chopped
  • 3 tablespoons vegetable oil, divided
  • 1/4 cup plain flour
  • 1 teaspoon seafood seasoning
  • 1 tablespoon dried oregano
  • 3 teaspoons minced garlic
  • 1 teaspoon dried thyme
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.5 teaspoon salt, or to taste
  • 1 pinch cayenne pepper

Instructions

  1. Toss shrimp with seafood seasoning until coated.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat; cook shrimp for 2–3 minutes per side until opaque. Remove and set aside.
  3. In the same skillet, add remaining oil and brown the ground beef.
  4. Add onions, bell peppers, and minced garlic; sauté until softened.
  5. Season the mixture with oregano, thyme, garlic powder, onion powder, chili powder, pepper, salt, and cayenne. Stir in flour to coat evenly.
  6. Pour in chicken broth while scraping up any browned bits; bring to a simmer for 5–7 minutes.
  7. Fold in cooked rice and return shrimp to the skillet; simmer until heated through.
