  • 12 oz penne pasta
  • 1 lb chicken breast or shrimp
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 cloves garlic
  • 2 teaspoons Cajun seasoning
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley or cilantro

Instructions

  1. Boil penne in salted water until al dente (about 1 minute under package time). Reserve ½ cup pasta water, then drain.
  2. Season chicken or shrimp with salt, pepper, and Cajun seasoning. Sear in a skillet with olive oil until fully cooked; set aside.
  3. In the same skillet, add remaining oil and butter, then sauté bell peppers and garlic for about 3–4 minutes.
  4. Stir in Cajun seasoning, then pour in heavy cream and simmer while mixing in Parmesan until creamy.
  5. Combine pasta and protein into the sauce. Add reserved pasta water if needed to adjust consistency.
  6. Garnish with herbs and lime juice before serving hot.
