  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F (195°C) and line a baking sheet with parchment paper.
  2. Wash the mini potatoes thoroughly and set them aside.
  3. In a bowl, mix 4 cups of cold water with 2 tablespoons of lemon juice to create a lemon water bath.
  4. Carve skull faces into each potato using a sharp knife, then place them in the lemon water bath to prevent browning.
  5. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper; mix well.
  6. Drain the carved potatoes and toss them in the seasoning mixture until evenly coated.
  7. Arrange the seasoned potatoes face-side up on the prepared baking sheet and bake for about 30 minutes or until golden brown and tender.
  8. Garnish with parsley flakes before serving.
