  • 3 to 5 slices turkey bacon (chopped)
  • 1 onion (chopped)
  • 1 red bell pepper (chopped)
  • 2 large sweet potatoes (peeled and cubed)
  • 1 teaspoon kosher salt
  • 8 grinds fresh black pepper
  • 1 teaspoon paprika
  • 2 cups kale (chopped)
  • 3 cloves garlic (minced)
  • 2 Tablespoons flour
  • 1½ cups corn (fresh or frozen)
  • 4 cups chicken stock
  • 2 cups half & half
  • ¼ cup fresh cilantro (chopped)

Instructions

  1. Wash and chop all vegetables. Peel and cube sweet potatoes.
  2. In a large pot over medium heat, cook chopped turkey bacon until crisp; set aside.
  3. Using drippings, sauté onion, red bell pepper, and sweet potatoes with salt, pepper, and paprika for about 10 minutes.
  4. Add kale and garlic; cook until fragrant.
  5. Stir in corn and chicken stock, cover, and simmer until sweet potatoes are tender (about 10–12 minutes). Lightly mash some sweet potatoes for texture.
  6. Mix in half & half and simmer for an additional five minutes until thickened.
