  • 25 grams butter
  • 1 onion, chopped
  • 1/2 sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • 1/2 teaspoon sugar
  • 125g dried breadcrumbs
  • 1/2 teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Add chopped onion and sweet potato; cook until soft (5-10 minutes).
  2. Stir in minced garlic and ground cinnamon, cooking until fragrant (about 1 minute). Add torn basil, chopped tomatoes, and chicken stock.
  3. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
  4. In a mixing bowl, combine all dumpling ingredients until just mixed; form into 8 balls.
  5. Blend the soup until smooth, adjusting seasoning if necessary.
  6. Drop dumplings into the soup and simmer uncovered for an additional 10 minutes without stirring.
