  • 1 large acorn squash (or 2 small)
  • 1 lb ground turkey
  • 1/2 yellow onion, chopped
  • 1 celery stalk, chopped
  • 1/4 cup dried cranberries
  • 1/2 apple, peeled and chopped
  • 1/2 teaspoon dried thyme
  • 1 tablespoon plain bread crumbs
  • 3 tablespoons grated Parmesan cheese
  • 1/2 cup chicken stock
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half vertically and scoop out the seeds.
  3. Brush the cut sides with olive oil and season with garlic salt and pepper. Roast on a baking sheet for about 50 minutes until tender.
  4. In a skillet, heat olive oil over medium heat; cook ground turkey until browned.
  5. Add onions and thyme to the skillet; sauté until onions are translucent.
  6. Stir in celery, apple, cranberries; cook for an additional few minutes.
  7. Combine cooked turkey with vegetables, chicken stock, breadcrumbs, and cheese; mix well.
  8. Fill each roasted squash half with the turkey mixture and bake for another 15 minutes.
