  • 12 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 2 tablespoons light corn syrup
  • 10 oz vegan marshmallows (approximately 35 marshmallows)
  • 1 teaspoon vanilla extract

Instructions

  1. Pop the popcorn using your preferred method until you have approximately 12 cups ready.
  2. In a saucepan over medium heat, melt the unsalted butter. Stir in brown sugar and light corn syrup; simmer for about 5 minutes while stirring until smooth.
  3. Add the vegan marshmallows to the caramel mixture and stir continuously until melted completely.
  4. Pour the caramel-marshmallow sauce over the popped popcorn in a large mixing bowl, tossing gently to coat evenly.
  5. Preheat your oven to 250°F (120°C). Spread the coated popcorn on a baking sheet lined with parchment paper and bake for about 30 minutes, stirring every 10 minutes.
